1/2 teaspoon lemon pepper, or 1 tablespoon fresh lemon zest plus 1 teaspoon black pepper

4 turkey cutlets (about 1 1/4 pounds)

2 tablespoons olive oil

1/2 cup dry white wine

1/2 cup diced, stewed tomatoes

1/2 cup reduced sodium chicken broth

1 tablespoon unsalted butter, chilled

2 tablespoons nonpareil capers

2 tablespoons fresh parsley, chopped)
