February 23rd, 2012 - Southwestern Polenta Chowder

1 medium onion, chopped

2 cloves of garlic, minced

2 cups frozen corn kernels, thawed

1 cup canned crushed tomatoes

1 14oz can mild chilies and liquid

6 cups vegetable broth

1/2 cup yellow cornmeal

1 tablespoon vegetable oil

1 tablespoon lemon juice

1/4 cup fresh cilantro, chopped

1/2 cup vegan cheddar style cheese, optional

salt and pepper

1 package meatless hamburger (I use Gimme Lean)

1 8 oz vegan cream cheese (Tofutti!)

1 package extra firm tofu

20 basil leaves

3-5 tablespoons lemon juice

1 large can black olives (helps if chopped)

2 garlic cloves

olive oil

vegan won ton wraps

spaghetti sauce of choice

flour

salt/pepper

6 poblano peppers (anaheims work too)

2 large tomatoes

1/2 yellow onion

1/4 to 1/2 jalapeno, depending on your spice tolerance

2 to 4 cloves garlic

1 tablespoon olive oil

1/2 to 3/4 cup vegan "chicken" stock

1-1/2 tablespoons cumin

1 tablespoon chipotle chili powder

salt, to taste

pepper, to taste

vegan cheese (I used Daiya)

vegan sausage (Mexican-style field roast, if possible)

mango or kale, or both

toothpicks

4 egg equivalents, prepared (optional; EnerG Egg Replacer or flax)

flour (optional)

oil For Frying (optional)
