6 carrots, chopped into large chunks

5 celery ribs, chopped into large chunks

1 softball-size onion, chopped into large dice

8 large cloves garlic, peeled

6 sprigs thyme

1 bay leaf, fresh or dried

1 20-pound turkey

8 tablespoons butter (1 stick), softened

3 tablespoons grill seasoning

3 tablespoons poultry seasoning

Softened butter, for greasing muffin tins

3/4 cup milk

3/4 cup chicken stock

4 Italian sweet sausages, pricked with a fork

4 Italian hot sausages, pricked with a fork

1 pound seedless black or red grapes

3 tablespoons extra virgin olive oil (EVOO), plus some for drizzling

Salt and black pepper

1 cup good quality aged balsamic vinegar – you don’t have to go too pricy

1/2 cup quick-cooking polenta

1 cup shredded Asiago cheese

6 eggs

6 ounces arugula

10 basil leaves, torn

1 lemon, juiced

6 tablespoons butter

3/4 cup hot sauce, such as Frank’s Red Hot brand

4 pieces bone-in, skin-on chicken breasts, cut in half across

4 chicken drummers

Salt and freshly ground black pepper

1 cup blue cheese crumbles

Juice of 2 lemons

1/3-1/2 cup mayonnaise (or make it lighter with buttermilk)

6-8 ribs celery from the heart with greens, thinly sliced on an angle

2 cups shredded carrots

6 scallions, white and green parts, thinly sliced

1/2 head red cabbage, cored and shredded

3 cups salad croutons, ground into crumbs in a food processor

1/4 cup flat leaf parsley leaves, finely chopped
