3 green onions, chopped

2 cloves garlic, pushed through a press

1 egg, beaten

3 tablespoons chopped fresh cilantro, divided

1 tablespoon ground cumin

1 teaspoon salt

1/2 teaspoon chili powder

1 cup green salsa

1 medium avocado, peeled, pitted and cubed

2 tablespoons vegetable oil

1 tablespoon olive oil

12 large skinless chicken thighs (3 1/2 pounds)

2 tablespoons unsalted butter

1 small onion, chopped (about 1/2 cup)

2 tablespoons tomato paste

2 cups bottled clam juice

2 tablespoons ThickenThinTM Not Starch

1 pound cooked shrimp, shell on, 8 reserved and peeled for garnish

1 cup cream

1/2 cup water

1 tablespoon dry sherry or brandy (optional)

1 teaspoon fresh tarragon, chopped, with additional whole leaves for garnish

salt and freshly ground black pepper

dash cayenne pepper (optional)
